Dinner Is Served: One Sheet Pan Chicken Caprese

Start off your week with a new recipe that is not only easy to make, but easy to clean up after! On this week of “Dinner Is Served” we will be making sheet pan chicken caprese! The best part about this dish is that it involves only one pan! With less prep time and less cleaning time, we can spend more time enjoying the best part, eating!

So let’s get started!


  • 1 tablespoon of olive oil
  • ½ tablespoon of Italian seasoning
  • Kosher salt and freshly ground black pepper
  • 1 pint of cherry tomatoes
  • 3 boneless skinless chicken breasts
  • A bottle of balsamic glaze, for drizzling
  • ½ pound of sliced mozzarella
  • 5 fresh basil leaves


  • Preheat the oven to 400 degrees fahrenheit and get out one sheet pan for prep.
  • Add a half tablespoon of olive oil to the pan and spread it around to coat the base of the pan.
  • Sprinkle your Italian seasoning, salt and pepper on the pan thoroughly.
  • Place your cherry tomatoes on the pan and give the pan a nice shake, so the tomatoes become well coated in the olive oil.
  • Place your chicken in the center of the pan and push the tomatoes to the edges of the pan.
  • Drizzle your remaining olive oil over the chicken.
  • Bake for about 20 to 25 minutes or until the tomatoes are blistered.
  • Take the pan out of the oven and drape your slices of mozzarella over each chicken breast.
  • Place the pan back in the oven and bake for an additional 5 to 7 minutes.
  • Plate your masterpiece with a drizzle of balsamic glaze on the chicken breast and top with basil leaves.
