Dinner Is Served: Spicy Miso Portobello Mushroom Burger

On this episode of Dinner Is Served we will be making some delicious spicy miso portobello mushroom burgers! I have actually never tried a burger that was not beef so I am pretty excited to try this. I already love mushrooms. I’ve moved on from that phase in my life where I thought mushrooms were gross. Mushrooms are great though and they are often used as a substitute for meat! 

So let’s get started! 

Tools:

  • A mandolin or a vegetable peeler

 

Ingredients:

  • 2 large portobello mushrooms
  • 1 tablespoon of miso
  • 1 tablespoon of toasted sesame oil
  • A pinch of salt and pepper 
  • 1 tablespoon of sriracha
  • 2 whole wheat buns, grilled

 

For the Cucumber Ribbon Salad

  • 2 cucumbers, cut length-wise 
  • 1 scallion, slice diagonally 
  • 1/4 teaspoon of salt 
  • 2 teaspoons of rice vinegar 
  • 1/4 teaspoons of sugar
  • 1/2 teaspoon of toasted sesame seeds

 

For the Carrot  Slaw

  • 1 1/2 cups of carrots, grated 
  • 1 scallion
  • 1/4 teaspoon of salt
  • 1/4 teaspoons of sugar 
  • 2 teaspoons of rice vinegar
  • 1/2 a teaspoon of toasted sesame seeds

 

For the Asian Guacamole

  • 1 large avocado, cubed 
  • 1 teaspoon of ginger, finely chopped
  • 1 teaspoon of rice wine vinegar
  • 1 teaspoon of sesame oil
  • 1/4 teaspoons of salt and pepper 
  • A pinch of chili flakes and sesame seeds

 

Instructions:

  1. Preheat the grill. In a small bowl, mix the miso, sriracha and sesame oil with a pinch of salt and pepper. Brush the paste onto the portobello mushrooms. 
  2. Place the cut cucumbers in a medium bowl with the scallions, add the dressing ingredients and toss. 
  3. For the carrot slaw, add the carrots in a separate medium bowl and add dressing ingredients. 
  4. For the guacamole, add all the ingredients in a small bowl. Smash all the ingredients together until you have a creamy consistency. Sprinkle with some chili flakes and sesame seeds. 
  5. Grill the portobellos with the tops down first for about 4-5 minutes over medium heat. Repeat on the other side. 
  6. To assemble burgers, put the guacamole on the buns. Place the portobello inside and top with the cucumber ribbon and carrot slaw. Squeeze some sriracha if you’d like!
